Vegan Basil Pesto
This vegan basil pesto is the prove that delicious and simple can co-exist when it comes to healthy meals! Only a few simple ingredients and we got a creamy, flavourful sauce for our spaghetti – without the need of any oil or strong spices and still super tasty.
My favourite way to enjoy such a raw vegan basil pesto is with zucchini noodles. Treating yourself with a comfy pasta dish without the heavy feeling afterwards – isn’t that the dream? Add some leafy greens or veggies on top like spinach or bell pepper and you got yourself a tasty and nutritious raw vegan meal!

Vegan Basil Pesto Recipe:
– 1 small zucchini
– 10 walnut halves
– 1/2 avocado
– 1 cup fresh basil
– 1-2 garlic cloves
– 1tbsp lemon juice
– Dash of Himalayan salt
– Dash of black pepper
1. Cut the zucchini into big pieces and put it into the blender.
2. Add all other ingredients into the blender and mix until smooth.
3. Enjoy over your raw zoodles or a colourful salad!
